Guaiacol (or guaiacol, named after the guaiac tree native to Latin America) is a natural organic compound with the formula C6H4(OH)(OCH3). This colorless aromatic oil-like compound is the main component of creosote, which can be prepared from guaiac resin, pine oil, etc. Common guaiacol has a dark color due to exposure to air or light. Due to the breakdown of lignin, the smoke produced when wood is burned contains guaiacol. Many foods have a particular odor due to the presence of guaiacol, such as roasted coffee beans. The special flavor of smoked food is mainly due to the action of guaiacol and syringol. Guaiacol turns blue when it meets ferric chloride.
