It is used in the food industry as a leavening agent, dough conditioner, buffer, texture modifier, curing agent, nutritional supplement, chelating agent, etc. Such as a leavening agent for baked goods and pastries; Leavening agent, buffer and pectin curing agent (gelation effect) for bread and biscuits; Yeast food, tissue improvers for meat products, etc. Sodium propionate is used as a food preservative and fungicide. It can be used alone or in combination with propionic acid and sorbic acid. Because it is alkaline, it is more suitable for pastry making than calcium propionate. Propionate is of great significance for the preservation of baked goods such as bread, pastries and biscuits. 

Sodium propionate, a wet acid type preservative, has its antibacterial effect influenced by the environmental pH. Its minimum inhibitory concentration is 0.01% at pH 5.0 and 0.5% at pH 6.5. In acidic media, it has a strong inhibitory effect on various molds, aerobic spore-forming bacilli or Gram-negative bacilli. It is particularly effective in preventing the production of aflatoxin, but almost ineffective against yeast. Additionally, it is also used as a preservative in food.
