Dipotassium hydrogen phosphate is a colorless flaky or needle-like crystal or white granule. It is deliquescent and readily soluble in water (1g dissolves approximately in 3mL of water). Its aqueous solution is weakly alkaline, with a pH of about 9 for a 1% aqueous solution. It is insoluble in ethanol. Density: 2.33g/cm ³. It can be used as an analytical reagent, and in the food industry as a buffer, chelating agent, yeast food, emulsifying salt, and antioxidant enhancer.

It is used in the food industry as a raw material for preparing alkaline water for pasta products, a fermentation agent, a flavoring agent, a leavening agent, a mild alkaline agent for dairy products, and yeast food. Used as a buffer and chelating agent.

Used for boiler water treatment. It is used as a phosphorus and potassium regulator and a bacterial culture medium in the fermentation industries. It is the raw material for manufacturing potassium pyrophosphate. It can be used as a liquid fertilizer and a corrosion inhibitor for ethylene glycol antifreeze. Feed grade is used as a feed nutritional supplement.
