Sodium polyacrylate is a white powder. Odorless and tasteless. It has extremely strong hygroscopicity. Polymer compounds with hydrophilic and hydrophobic groups. It dissolves slowly in water to form an extremely viscous and transparent liquid. The viscosity of its 0.5% solution is approximately Pa•s. The viscosity is not mainly caused by water absorption and swelling (such as CMC, sodium alginate), but rather due to the ionic phenomenon of many anionic groups within the molecule, which causes the molecular chain to grow, resulting in an increase in viscosity and the formation of a highly viscous solution. Its viscosity is approximately 15 to 20 times that of CMC and sodium alginate. Heating treatment, neutral salts and organic acids have little effect on its viscosity, while the viscosity increases when it is alkaline. Insoluble in organic solvents such as ethanol. It does not decompose when strongly heated to 300 degrees. The viscosity changes very little after long-term storage and is not prone to spoilage. As it is an electrolyte, it is easily affected by acids and metal ions, resulting in a decrease in viscosity.

It is used as a thickener and stabilizer in sauce products, light cream and tomato sauce. It is used as a dispersant in fruit juice and alcoholic beverages. It can improve the taste of ice cream and enhance its stability. Surface gelling agents for frozen and aquatic processed products, serving a preservative function. It can also change the structure of proteins, enhance the viscoelasticity of food and improve the texture.
