Lecithin, also known as phosphatidylcholine, is a lipid formed by the dehydration condensation of glycerol, fatty acids (two molecules), phosphate, and choline. The fatty acid chains in its molecule can be either saturated or unsaturated, and they are non-polar and hydrophobic tails; the phosphate choline part is a dipole ion, which is polar and hydrophilic at the head. It is called the "third nutrient" after proteins and vitamins. It is the material basis of life, the basic raw material for various membrane structures of cells, and exists in every cell. It is more concentrated in the liver, brain, heart, kidneys and immune system. It is synthesized by the liver in the human body, and is mainly found in soybeans and egg yolks.

The primary use of soybean phospholipids is as food additives, followed by their use as feed additives. They are also employed in cosmetics, and as emulsifiers in leather and asphalt products. 

Used as raw materials for health food, emulsifiers, and quality improvers.As an emulsifier, phospholipids can also help the human body absorb fat-soluble vitamins A, D, E, K, etc., to meet the normal operation needs of the human body.
