Sodium propionate is a food preservative and mold inhibitor permitted for use in China as stipulated in GB2760-1996. It is used in pastries and cheese, and can be used alone or in combination with propionic acid and sorbic acid.

It is the most active under acidic conditions, generating free propionic acid, and has antibacterial properties. It has a wide range of antibacterial effects against molds, yeasts, and bacteria, but is ineffective against yeasts. Its antibacterial characteristics are the same as propionic acid. It can be used as a preservative and anti-mold agent for pastries, soy products, dumpling wrappers, wonton wrappers, sliced noodles, cheese, etc. In the processing of rambutan canned food, it is used for soaking rambutans. In beer production, it can inhibit the formation of undesirable viscous substances.Disinfectants, anti-mold agents. Measurement of transaminase. Food, feed and anti-corrosion, anti-mold agents. The general addition amount is 0.1 - 0.3%.
