Chemical properties
Yellow needle-like crystals (formed by crystallization from water). The color becomes darker upon exposure to light. It has a bitter taste. Melting point: 177 - 178ºC. When dried at 95 - 97ºC, it forms a dihydrate with two molecules of water. After drying at 110ºC under vacuum (1.33×10³Pa) for 12 hours, it becomes an anhydrous form. The anhydrous form is hygroscopic and has a melting point of 190 - 192ºC. It can absorb 2.5 molecules of water in the air. Its solubility in cold water is 0.012%, and in hot water is 5%. It is slightly soluble in ethanol.
It has the function of normalizing the vascular walls in animals. It can prevent arteriosclerosis. Together with hesperidin and stachydrine, it acts as a substance with vitamin P-like effects.
It is found in perilla, buckwheat tree buds, tobacco leaves, oak leaves, tomato stems and leaves, etc. The dried and mature wheat at the stage of about to bloom contains approximately 3%.

The main functions:
Food colorings (such as lemon yellow); antioxidants; nutritional supplements. They are mainly used in cold drinks, beverages, pastries, meat products, seafood products, etc.

It has a lipid-eliminating effect on fatty-inflamed liver. When used in combination with glutathione, the lipid-eliminating effect is even more pronounced.
