Sodium lactate is used for food preservation, moisture retention, aroma enhancement, and as a raw material for pharmaceuticals in the manufacturing of medicines. It is also used as a casein toughening agent and water absorber. In terms of food antibacterial properties, sodium L-lactate can not only inhibit the reproduction of most spoilage bacteria, but also has varying degrees of inhibitory effects on many pathogenic bacteria, such as Listeria monocytogenes, Salmonella, Clostridium , etc., thereby effectively extending the shelf life of meat products. Sodium L-lactate has been successfully applied to whole meat products such as cooked ham, roast beef and chicken breast, as well as minced meat products such as hot dog sausages, fresh sausages, smoked sausages and salami. The ham without the addition of sodium L-lactate L deteriorated within 15 days, and the total bacterial count reached 106. The shelf life of ham supplemented with sodium L-lactate can be extended to 4 weeks. When sodium L-lactate is used in combination with other preservatives (potassium sorbate), the antibacterial effect is more significant. In addition to its antibacterial effect, sodium L-lactate in meat products also has the functions of retaining moisture, increasing yield, reducing moisture precipitation of vacuum-packed products, antioxidation and enhancing the aroma of meat.
Sodium L-lactate can be used as an acidosis antidote, condiment, plasticizer, antifreeze, humectant and corrosion inhibitor, etc. It can be obtained by the reaction of sodium carbonate and lactic acid.
