 It has the following effects in food:
(1) Enhance the protein binding power in the raw material flour;
(2) Enable starch particles to combine with each other, disperse and penetrate into the network structure of proteins;
(3) Form a dense dough with a smooth and lustrous surface;
(4) Form a stable dough colloid to prevent soluble starch from seeping out;
(5) It has strong water retention, keeping moisture evenly in the dough and preventing it from drying out.
(6) Enhance the extensibility of the dough;
(7) Ensure that the oil components in the raw materials are stably dispersed into the dough. As an electrolyte, it interacts with proteins, alters their structure, enhances the viscoelasticity of food, and improves the texture.
