Chemical properties 
Orange-yellow crystalline powder. Has a peculiar odor. Melting point: 179 - 182ºC. Insoluble in water and ether, soluble in ethanol, acetic acid, and propylene glycol. Turns red-brown in alkaline conditions and light yellow in acidic conditions. Forms a color precipitate with magnesium hydroxide, presenting a yellow-red color. Forms chelates with metal ions, especially iron ions, causing color change. About 5mg/kg of iron ions begins to affect the pigment, turning red-brown when above 10mg/kg, reducing the dyeing ability. Therefore, an appropriate container should be selected. It is best to use together with chelating agent hexametaphosphate sodium and acidic tartrate sodium. Poor light resistance and iron ion resistance, good heat resistance. Strong dyeing power (especially for proteins).

Uses
It is widely used for coloring foods, dishes, pastries, candies, canned beverages and cosmetics.
It can be used as a coloring agent for feed. In China, it is stipulated that it can be used in candies, jellies, ice cream and carbonated beverages, with the maximum usage amount being 0.01g/kg.
A pure natural food coloring agent, it features strong coloring power, good heat resistance and excellent light resistance.
