Triethyl citrate is an oily colorless liquid at room temperature and pressure, and its solubility in water (25ºC) is 6.5g/100cm3. It has a sweet and pleasant fruit wine, plum like aroma. The compound can dissolve in most organic solvents, but it is difficult to dissolve in oil. The compound has good compatibility with most cellulose, polyvinyl chloride, polyvinyl acetate resin and chlorinated rubber.
 

Triethyl citrate is a non-toxic plasticizer, widely used in cellulose resin and vinyl resin plasticizer, as a bulking preservative in food can well improve the foaming property of baked food, improve the bulking state, as an antioxidant used to stabilize soybean oil, salad oil, margarine, shortening and other edible oils. As a flavor enhancer, it can be used in soft drinks, cold drinks, candy, baked goods to increase flavor, and is also used as a chelating agent and carrier solvent.
