Sorbic acid is currently the most widely used acid-type food preservative worldwide. Under acidic conditions (pH value below 5 to 6), it has inhibitory effects on molds, yeasts, and aerobic bacteria, but is almost ineffective against anaerobic spore-forming bacteria and lactic acid bacteria. When used in food industry in plastic barrels for concentrated fruit and vegetable juices, the dosage should not exceed 2g/kg; in soy sauce, vinegar, jam-like products, hydrogenated vegetable oil, soft candies, dried fish products, ready-to-eat bean products, pastry fillings, bread, cakes, mooncakes, and ready-to-eat jelly-based lactic acid bacteria beverages, the maximum usage is 110g/kg; in wine and fruit wine, the maximum usage is 0.6g/kg; in gelatin protein sausage casings, low-salt pickles, sauce-like products, dried fruits, fruit-flavored beverages and jelly, the maximum usage is 0.5g/kg; in fruit preservation and carbonated beverages, the maximum usage is 0.2g/kg; in meat, fish, egg, and poultry products in the food industry, the maximum usage is 0.075g/kg.
The maximum allowable concentration of sorbic acid in food is 0.1%. It is mainly used for preventing mold in cheeses, pickled vegetables, dried fruits, juices, fruit syrups, beverages, candied fruits, bread, candies, etc. It is also used for preserving fish products. It is also applied in cosmetics, medicine, feed, and other fields. Industrially, it is produced by condensing butylaldehyde with acetylone and then decomposing it.
